What type of white beans can I use?

– Cannellini beans (White kidney beans)

-Great Northern beans

-Navy beans

-Lima beans (Butter beans)

I recommend using any white beans as long as it is pre cooked . If you do not want to use pre cooked white beans, first soak the beans in water for at least an hour to soften them before boiling.

Shrimp and White beans Stew

For more flavor, I recommend adding my green sauce marinade. This is one of my recipes I am most proud of. It is packed with flavor and works well on almost everything.I use it as a marinade for fish, chicken, beef, in stews etc. Since it is a must have in my kitchen, I usually make a big pot of it and store some in my freezer for later use and the rest in my refrigerator.

What if I don’t eat Shrimps?

If you do not eat shrimps, use beef, chicken, fish, or add a variety of vegetables to it and serve as a meatless course.

Accompany your Shrimp and White beans with a side of rice, fried plantains or garlic bread.

Shrimp White Beans Stew

Something quick, something delicious ! This bean stew made with simple ingredients is the perfect hearty weeknight meal.

Ingredients

  • 800 grams canned white beans
  • 6 tiger shrimps
  • 3 large tomatoes
  • ½ large onion
  • 2 cloves garlic
  • 2 inch ginger
  • ¼ tsp salt
  • 2 mini seasoning cube
  • 3 tbsp vegetable oil

Shrimp seasoning

  • ½ tsp salt
  • ½ tsp all purpose seasoning

Optional

  • 1 tbsp green sauce (link to recipe below)

Instructions

  • Blend tomatoes, onion and garlic in a food processor to a chunky puree.
  • Devein, wash and dry shrimps. Season with salt and all purpose seasoning.
  • Add oil to a skillet on medium heat and fry shrimps for 3 minutes on each side. Take off heat and set aside.
  • To the same skillet, add pureed tomatoes and let it simmer till the liquid reduces. What will be left are chunks of tomatoes with very little liquid.
  • Add beans ,shrimps, seasoning cube (maggi), salt. Cover the skillet for 5minutes.
  • Open skillet and add green sauce marinade.
  • Stir and immediately take off heat.
  • Enjoy.
