It is sad to say summer will soon be over. The BBQs and salads will now give way for comfort food. Fortunately, the recipe I am about to share is perfect all year round. Many of us are familiar with consuming grilled bell peppers as a summer side dish, layering them on pizza or adding them to pasta .Have you ever tried Grilled Bell Pepper Marinade? Char grill bell peppers alongside other herbs, blitz to a paste and use as a marinade for chicken. It is as easy as that.

After grilling, pickling, stir frying some Bell Peppers from a huge batch I got from a friend, I figured it would be a good idea to make a marinade out of the rest and this turned out to be such a great idea.

Ingredients and Grilling Method:

For this recipe, I used all colors of Bell Peppers, onion/ spring onion , garlic, ginger, basil, thyme and rosemary.

Foil method: This is my favorite method because, all the juices from the Bell peppers are retained in the foil packet while it grills. Create a foil package, set it directly on top of the grill grates and grill for 20 minutes.

Oven grill method: Place the foil package on an oven tray and bake in the oven for 20 minutes at 200°c or till the skin of the bell peppers are slightly charred.

You can use a grill pan with raised parallel ridges but do not use a perforated pan.

This marinade is savory, slightly tangy and packed with layers of flavor. Baste on chicken wings and enjoy deliciously tender,juicy, fall off the bone chicken. It can also be used on beef or pork.

Grilled Bell pepper marinade for Chicken.

Prepare marinade for chicken by grilling bell peppers before blitzing into a paste. To it, add vinegar,olive oil and seasoning cube.

Ingredients

Grilling:

  • ½ green bell pepper/capsicum
  • ½ red bell pepper/ capsicum
  • ½ yellow bell pepper/capsicum
  • ½ green banana pepper (optional)
  • 1 small onion
  • 3 large garlic cloves
  • 1 piece ginger (measuring about 3 inches)
  • 1 sprig basil
  • 1 sprig parsley
  • 1 sprig rosemary
  • 1 spring onion
  • 1 tbsp olive oil
  • ¼ cup water

Seasoning Ingredients:

  • 1 tbsp seasoning powder
  • 1 tsp salt
  • 1 tbsp vinegar
  • 1 tbsp olive oil

Other Ingredients:

  • 1 kg chicken wings

Instructions

  • Make a foil packet with bell peppers and all the other herbs except water. Drizzle with olive oil, wrap the foil paper tight and grill for 20minutes on high heat or till veggies are char grilled.
  • Take veggies and herbs out of foil paper alongside its juices. Place in a blender, add water and blitz to a rough paste.
  • To veggie paste, add seasoning ingredients and mix.
  • Pour ¾ of the marinade over chicken wings and place in the refrigerator for 30minutes. Set aside the rest of the marinade for later.
  • Heat grill to medium heat and oil grill grates. Add wings and cook for 10 minutes on each side. It will take 20 minutes for the wings to be cooked through.
