Ingredients
Grilling:
½greenbell pepper/capsicum
½redbell pepper/ capsicum
½yellowbell pepper/capsicum
½greenbanana pepper(optional)
1smallonion
3largegarlic cloves
1pieceginger(measuring about 3 inches)
1sprigbasil
1sprigparsley
1sprigrosemary
1spring onion
1 tbspolive oil
¼cupwater
Seasoning Ingredients:
1tbspseasoning powder
1tspsalt
1tbspvinegar
1tbsp olive oil
Other Ingredients:
1kgchicken wings
Instructions
Make a foil packet with bell peppers and all the other herbs except water. Drizzle with olive oil, wrap the foil paper tight and grill for 20minutes on high heat or till veggies are char grilled.
Take veggies and herbs out of foil paper alongside its juices. Place in a blender, add water and blitz to a rough paste.
To veggie paste, add seasoning ingredients and mix.
Pour ¾ of the marinade over chicken wings and place in the refrigerator for 30minutes. Set aside the rest of the marinade for later.
Heat grill to medium heat and oil grill grates. Add wings and cook for 10 minutes on each side. It will take 20 minutes for the wings to be cooked through.
