What makes this fruit salad exceptional?
The answer is simple- Pineapple Peel Dressing.
Pineapples are sweet, refreshing, tangy with a slight tart to them. I use all of it in this recipe including the peel. The flesh is cut into one inch cubes while the outer skin and core is submerged in water and cooked on high heat. Sugar is later on added to the pineapple peel juice, after which it is left to chill and then poured over the diced fruits.
Choice of fruits:
I normally stick to watermelon, hard but ripe mangoes and pineapple. You can use any fruit of choice but be sure to add pineapple.
I will not recommend fruits like peaches and nectarines. They get very slippery and loose their color quickly.
Fruit Salad with Pineapple Peel Juice
Ingredients
- 1 large pineapple
- ΒΌ large watermelon
- 2 large mangoes
- 4 cups water
- 1 tbsp lemon juice
Instructions
- With the pineapple placed upright,use a long sharp knife to slice off the peel, digging slightly so there is some flesh on the peel. Take off any eye bits left on the pineapple.Slice off the bottom.
- Cut the flesh and set the core of the pineapple aside.
- Chop the core of the pineapple. Add the skin and core to a pot of water. Boil on high heat for 15 minutes. With a sieve or cheesecloth, strain the juice making sure no particles go through. Add sugar and boil again till the sugar dissolves and liquid starts bubbling. Take off heat and set aside to cool.
Make the fruit salad:
- Chop the pineapples, watermelon and mangoes into 1 inch cubes. Combine the fruits,top with the pineapple peel juice and lemon juice. Place in the refrigerator and serve cold.
