Ingredients

4cupswater
1tbsplemon juice
Instructions
With the pineapple placed upright,use a long sharp knife to slice off the peel, digging slightly so there is some flesh on the peel. Take off any eye bits left on the pineapple.Slice off the bottom.
Cut the flesh and set the core of the pineapple aside.
Chop the core of the pineapple. Add the skin and core to a pot of water. Boil on high heat for 15 minutes. With a sieve or cheesecloth, strain the juice making sure no particles go through. Add sugar and boil again till the sugar dissolves and liquid starts bubbling. Take off heat and set aside to cool.
Make the fruit salad:
Chop the pineapples, watermelon and mangoes into 1 inch cubes. Combine the fruits,top with the pineapple peel juice and lemon juice. Place in the refrigerator and serve cold.
