Four Spice also known as Quatre Epices is a spice blend that contains white pepper, nutmeg, ginger, and cloves and it’s used to season everything from soups to grilled chicken. It’s often incorporated in pâté and sausage. This spice mix is available at the supermarket or can be homemade by combining

  • 2 tsp whole cloves
  • 1 tsp white pepper
  • 2 tsp nutmeg
  • 1/2 tsp ginger powder

Equipment

  • 1 loaf pan (measuring 32 by 9cm)

Ingredients

  • 1 cup warm milk (whole milk)
  • tsp yeast
  • 3 tbsp granulated sugar
  • 1 large egg
  • 2 tbsp melted butter (unsalted)
  • 3 cups all purpose flour
  • ¾ tsp salt
  • 2 tbsp heavy cream

Filling:

  • ¼ cup softened unsalted butter
  • ¼ cup brown sugar
  • tbsp four spice or quatre epices

Instructions

  • Warm milk to about 43°c or 110°F. Pour milk into a large mixing bowl,add yeast and sugar. Whisk in egg and melted butter,
  • To the flour, add salt and mix.Then add the flour mixture to the wet ingredients, stir until it forms a soft dough. On a lightly floured surface,knead dough for 3 minutes. Place in a lightly greased bowl,cover with a cloth and set aside for 10 minutes while you get the other ingredients ready.
  • To a small mixing bowl, add softened butter, brown sugar and Four Spice. Mix till incorporated .
  • Roll the dough out in a 17 by 10 inch rectangle.Spread the filling evenly all the way to the edges. Slice into 20 rectangles. Pick up rectangles layering them one on another and stack them horizontally in a greased loaf pan measuring 32 by 9cm. Cover and allow it to rise for 45minutes.
  • While waiting for dough to rise, preheat oven to 170°c or 350°F .When bread has doubled in size, top with heavy cream and bake for 25 minutes or until the top is golden.Serve and enjoy.
