Slightly sticky on the outside and soft inside, this simple and humble recipe is absolutely delicious. Braised potatoes are perfect as a side dish but in this version, I added veggies to them to serve as a vegetarian meal option.

How do You Braise Potatoes?
-Cook in butter or oil and stir continuously till they begin to turn golden
-Add stock and seasoning to taste(I used my homemade BBQ sauce)
-Add water,just enough to prevent the pan from burning(about 1 cup). Bring to boil on low heat and simmer.
-Garnish with herbs and serve.

Braised Potatoes and Veggies

Ingredients

  • tbsp Olive oil
  • 500 grams Potatoes
  • 1 medium Onion
  • 200 grams Shredded oyster mushrooms
  • ½ Yellow bell pepper
  • ½ Red bell pepper
  • 1 cup Water
  • 2 Garlic cloves
  • 2 tbsp BBQ Sauce
  • 1 tsp Salt
  • 1 tsp Seasoning powder
  • 2 cups Chopped spinach

Instructions

  • To a preheated pan; add olive oil,garlic,potatoes,onion,mushrooms and BBQ Sauce. Turn continuously, till potatoes are golden on all sides. This should take approximately 5 minutes.
  • Add bell peppers,seasoning powder, salt and water. Cover the pan and let it cook on high heat for 10 minutes.
  • Finally, add spinach, cook for another 5minutes and then take pan off heat.
  • Enjoy.
