I am not a big drinker but one thing you will always see in my refrigerator is a bottle or two of Baileys Irish cream. This recipe is inspired by an Irish cream and Coffee stacked birthday cake which I baked for a friend. It turned out to be the perfect pairing and I thought it will be a great idea to infuse both flavors into one cake.
If you are a lover of coffee , then be sure to enjoy this boozy cake. Glaze it with a coffee and baileys syrup and you are in for a real treat.

One Bowl Coffee and Baileys Cake
A Coffee Cake laced with a Salted Caramel Irish Cream is the perfect pairing. For a more boozy flavour, glaze with a Coffee and Irish cream syrup.

Equipment
- 2 20cm springform cake
Ingredients
- 2 cups flour
- 1½ cup brown sugar
- 3 tbsp instant coffee
- 2 tsp baking soda
- 1 tsp salt
- 3 large eggs
- ¾ cup milk
- 1 tsp vanilla
- 1 cup vegetable oil
- ½ cup baileys irish cream
- ½ cup boiling water
Coffee and Baileys Glaze:
- 1 cup powdered sugar
- 2 tbsp espresso powder
- 3 tbsp boiling water
- 1 tbsp Irish Cream
Instructions
- Prepare two 8 inch cake pans by greasing with butter and dusting with flour. Preheat oven to 300°F (150°C).
- To the mixing bowl, add milk, oil, eggs, vanilla paste and Irish cream. Mix well.
- Add all dry ingredients.. Mix till well combined. If you find this time consuming, you can use a hand mixer.
- Add boiling water and slowly mix into batter till incorporated.
- Divide the batter evenly between the cakes pans and bake for about 34-36 minutes, or until a toothpick comes out with a few crumbs. Do not over bake,else it dries out.
Coffee and Baileys Glaze
- Add boiling water to espresso powder and mix, Combine powdered sugar, espresso powder mixture and Irish cream in a medium bowl; stir well with a fork until smooth. Poke your cake in different areas and drizzle glaze generously over cake; serve.
