Pumpkin Pie Spice Chicken and Pear Salad

Pumpkin Pie spice has become autumn's favorite seasoning. Not only is it great for sweet bakes, it served as the perfect marinade for my chicken and pear salad.

Ingredients

Chicken thighs seasoning:

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 2 tbsp pumpkin pie spice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp salt
  • 1 tbsp seasoning powder (chicken flavor preferably)

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp apple sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1 tsp garlic
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried herbs of your choice

Other Ingredients

  • 1 pear
  • 200 grams butter head lettuce (or any of your choice)

Instructions

  • Mix all dry ingredients for the chicken.
  • Drizzle chicken thighs with olive oil on both sides. Set aside. Can be left overnight.
  • Add a tablespoon of olive oil to a skillet and once it is hot, add chicken breasts. Flip both them over after 5minuites and continue to cook the chicken for 7 more minutes. Cooking time will always depend on the thickness of the chicken breasts.
  • Slice chicken across the grain.

Dressing

  • Mix all ingredients for the salad dressing in a mason jar. Shake vigorously.
  • Slice the pear in half vertically. Take out the hard mid section of the pear. Turn the pear flat side down and slice.
  • Plate salad starting off with the lettuce, then chicken and pears. Top with the dressing.
