Peanut butter marinade

Chicken wings simmered in a peanut butter marinade is my idea of a perfect party food.

Ingredients

  • 1 tbsp vegetable oil
  • 1 large onion
  • 1 spring onion
  • ¼ cup fresh parsley
  • 1 sprig thyme
  • ½ red bell pepper
  • 4 slices ginger (¼ inch thick each)
  • 3 garlic cloves
  • 2 tbsp peanut butter
  • ¼ cup water
  • 2 tsp seasoning powder
  • 2 tsp salt
  • 1 tsp white pepper ( Penja pepper)
  • 2 tbsp vegetable oil (as topping)
  • 1 kg chicken wings

Instructions

  • Pour oil into a hot skillet. Add onion,spring onion, parsley, thyme, bell pepper, ginger and garlic. Fry for 5 minutes in order to release flavor.
  • To a blender, add the fried veggies, peanut butter and water. Blitz to a smooth paste.
  • Pour into a bowl and add vegetable oil, seasoning powder, salt and white pepper. Mix and top with vegetable oil.
  • Pour ¾ of the marinade over chicken wings and place in the refrigerator for 30 minutes. Set aside the rest of the marinade for later.
  • Heat grill to medium heat and oil grill grates. Add wings and cook for 10 minutes on each side. It will take 20 minutes for the wings to be cooked through.
  • Use the rest of the marinade as a dipping sauce for your wings. Enjoy!
